When the weather turns balmy and crowds press towards the eastern beaches, the canny pause at Ruby's Diner in Waverley. You will find a narrow, street-facing nook brightened by a mural where a flock of vibrant birds sweeps across the back wall.

The menu leans into easy-going brunch comforts with a deli streak. A pastrami bagel brings warmth and tang with relish, purple kraut, and Swiss cheese, while the smoked salmon bagel teams cream cheese with peppery rocket, red onion, avocado, and pickles.

More heft arrives via the big breakfast choices and eggs Benedict, the latter paired with your choice of bacon, ham, or salmon. Lighter moods find many nourish and salad bowls including the popular roasted cauliflower and beetroot bowl. For a little sizzle, a breakfast burger beckons, while fish tacos with barramundi and guacamole nod to sunny days. Even better why not try their speciality coconut chilli eggs or kippers.

If you feeling like something sweet be tempted by the matcha honey ricotta French toast or the most mouth watering brownie.

You can take a seat, let the mural’s birds keep watch, and watch the street drift by. Drop in when the mood strikes to discover cheer and a menu with plenty to say. Now that is a shore thing.
