Breathing life into the childhood suppers that formed his family dinners in Brescia, Italy, Matteo Zamboni is proud to unveil his new concept.

And if you haven't heard of this renowned chef, allow us to enlighten you. A Former Head Chef at Pilu, Ormeggio at the Spit and Jonah's, Zamboni is an established and celebrated name in Sydney's fine dining scene. Civico 47, however, is really approachable, thanks to its light and beachy spin to the traditional Italian bistro. The setup is simple and intimate with few frills, making for a clean and uncluttered space that doesn't distract you from the main event.

Which is the food, of course. And whilst it might anchor itself with the dishes we know and love, they're also not afraid to showcase some more contemporary creations. To begin, classics like beef carpaccio and stracciatella with salty pancetta make a strong appearance whilst Zamboni's culinary intuition can't help but take local ingredients, like Moreton Bay bugs, and transform them into a spritely crudo with lemon oil and zucchini.

The main course follows suit. Recognisable pairings like maccheroncini and cheese are graced by a smoky pork ragu and nashi pear. There's also a fine Angus beef that can be found with caramelised onions, pumpkin and a surprising punch of fennel. Zamboni has recruited the talents of top sommelier Luke Collard, who has curated a focus on fine, affordable Italian wines to their award-winning list to help you find the perfect pairing.
