For all the colour, the focus here is coffee, poured with purpose and best enjoyed at an unhurried pace.

The menu leans into easygoing brunch comforts with a deli streak. Bagels come generous and layered: a pastrami bagel brings warmth and tang with relish, purple kraut and Swiss, while the smoked salmon bagel teams cream cheese with peppery rocket, red onion, avocado and pickles. Flavours are familiar yet lifted, built for appetites at any hour.

Heft arrives via Ruby's big brekkie and Ruby's benedict, the latter crowned with glossy hollandaise. There is solace in a bacon and egg roll on a soft milk bun, or a double smoked ham and cheese toastie with the right crunch.
