Conte on Clarence Street invites Sydneysiders to slip into the cadence of Italy’s laidback culture. As the world’s first dedicated Negroni destination, it pours more than 30 expressions, from time-honoured to inventive, supported by a secret trove of rare amari, Italian vermouths and bitters. A knowledgeable team stands ready with thoughtful recommendations, whatever the mood calls.

In the kitchen, simplicity meets indulgence. Aperitivo plates lead the way: freshly shucked oysters and bruschetta crowned with stracciatella - perhaps pink snapper sashimi brushed with smoked lardo and brightened by green grapes. From the Berkel come gossamer slices of prosciutto di Parma and wagyu bresaola, while the formaggi board might linger with Parmigiano aged 36 months and Rosso di Langa.

Heartier appetites find their stride in pastas and secondi. Pappardelle agnello brings slow-cooked lamb ragu and tomato comfort, while gnocchi di patate nestle into pea puree with pecorino and pork guanciale. The anatra arrives with carrot and brandy vinegar puree and chargrilled cavolo nero - for a grand gesture, the fiorentina is made for two. Simple sides such as rucola or insalata di patate keep things elegantly grounded.

Chic yet home-like, this is a room made for lingering, whether for a swift aperitivo or an unhurried evening that stretches into stories. Book a perch, raise a glass, and let Bar Conte show how la dolce vita tastes - stirred, not rushed!
