DOLLY is an underground European restaurant and late-night cocktail bar in Melbourne CBD, set beneath the luxury hotel Le Méridien Melbourne on Bourke Street, directly next to the Princess Theatre.

Led by Bordeaux-born, Michelin-trained Executive Chef Hervé Borghini, DOLLY brings refined French technique to modern European dining in the heart of the city. The menu is anchored by its well-known Steak Frites, alongside a rotating edit of contemporary bistro classics designed for generous, uncomplicated plates.

Conceived as an affordable restaurant in Melbourne CBD, DOLLY pairs quality produce with disciplined execution at approachable price points. It is a natural choice for pre-theatre dining before a show at the Princess Theatre, relaxed midweek dinners, and special celebrations that call for Champagne and sharp martinis without excess.

For diners seeking strong value in the city, weekly dining specials offer considered pricing without compromising polish. The room is intimate yet relaxed, making it equally suited to date nights, birthdays and memorable evenings out.

European in outlook, French at heart, DOLLY delivers refined dining with the confidence of a place you will want to revisit.
