Perched on the rooftop of its sibling restaurant Askal, Inuman Melbourne is the city’s first Filipino beverage destination.
Named after the Tagalog word meaning 'to drink', it sets out to blend tradition with innovation, paying homage to classic mixcraft while honouring Filipino culture. The result’s a focused, quietly confident space where creation’s the headline and every pour has purpose.
Impeccable hospitality etiquette underpins the experience - time-honoured techniques are prized, yet reinterpreted with a modern twist as beverage artisans revive forgotten Filipino classics with contemporary clarity. It’s a setting that invites guests to slow down, savour, and appreciate the art of refreshment.
To complement each glass, light snacks nod to nostalgia and island flavours. Think Boy Bawang dusted with salt and vinegar saltbush, prawn crackers lifted with galangal spice powder, and from Askal, Pan de Melbourne with latik butter or chargrilled coconut flatbreads glazed with crab fat Alavar and curry leaf.
For heartier cravings, guests can enjoy oxtail kare-kare doughnuts with peanut, bagoong and black garlic butterscotch, alongside charcoal-grilled chicken inasal skewers with annatto condiment, wombok, sawsawan and pickles. There’s also pork siomai with toyomansi and pinipig chilli crisp, and crispy fried duck leg nuggets with banana ketchup.
