Founded in 1935 by James Calexte (Jimmy) Watson, the house championed exceptional hospitality. Jim’s excursions to north-east Victorian culinary producers shaped a tradition marked by a roaring lion over a barrel, still found on Jimmy Watson branding today. In 1960, the premises were reimagined as a dedicated bistro, with designs by Robin Boyd, completed in 1963, creating an intimate space revered by patrons and architects alike.

In the kitchen, classic comforts meet Italianate ease: think pork and beef meatballs in tomato sugo, crisp salt and pepper calamari, pan-fried gnocchi with roast pumpkin, and traditional chicken parmigiana. Pizzas range from a pure Margherita to The Carltonian.
