Al Dente Enoteca brings a polished slice of Italy to Carlton, Melbourne, channelling the spirit of the neighbourhood enoteca with a distinctly local accent. The kitchen leans into clean, confident flavours, pairing time-honoured technique with Australian produce. It is a menu that reads like a conversation between regions: measured, seasonal and quietly indulgent, made for unhurried dining and good wine.
Begin with assaggini that speak in textures and tone: warm sourdough with cultured balsamic butter, and burrata cushioned by heirloom beetroot, cashew and a flicker of merlot vinegar. Primi keeps things eloquent rather than showy, from spaghetti alle vongole to pillowy potato gnocchi folded with rabbit sausage, silverbeet, buffalo mozzarella, rocket and roasted almond. Secondi push deeper into the landscape, where Victorian dry-aged duck breast meets wood-fired parsnip, pickled plum and kakadu plum, and pan-seared lamb back strap sidles up to mustard mash, jalapeño, charred corn and jus.
Side notes are anything but afterthoughts, with a mixed leaf salad and grilled cos dressed in crème fraîche, peach, guanciale and a playful crunch of fried macaroni. To finish, latte e miele drifts in on buttermilk panna cotta, or take the darker turn with chocolate, burnt custard and plum bavarese.
