Sokyo at The Star Brisbane brings a cutting-edge vision of Japanese dining to the heart of Brisbane CBD, refracted through a modern Australian lens. Here, “Ritual Meets Art” is more than a mantra; it is a sensorial through-line. The kitchen leans into pristine Queensland produce and precise technique, transforming familiar gestures of washoku into something strikingly contemporary and deeply local.

Openings are clean and confident: edamame dusted with Maldon sea salt, or a bright seafood ceviche lifted by heirloom tomato, red onion and coriander dressing. Flavours are crisp, saline and citrus-led, setting a tone of restraint and freshness that runs throughout. There is a quiet drama to the plating, but the focus remains squarely on texture, balance and seasonality.

Mains speak in high-definition. Miso-glazed Tasmanian salmon is offset by jalapeño salsa and ginger-lime cucumber, a play of richness against cool heat. Binchoyaki spring chicken arrives with umami nori butter, charred baby capsicum and fermented chilli oil, a harmony of smoke, sweetness and tang. Sides pull their weight, from roasted Brussels sprouts with goma ponzu and pumpkin seed to feather-light kisu tempura with whiting, coriander salad and tarragon ponzu. To finish, the Sokyo mochi ice cream lands with a wink in frozen strawberry milkshake and black sesame. Or let the chef’s selection sushi steer the course.

For a polished, theatrical evening that still feels effortless, meet them at Sokyo. Reserve your appetite and let ritual meet art, bite by beautiful bite.
