Azteca, perched on The Terrace within The Star Brisbane, sets a sultry scene inspired by Latin America with whispering touches of Asian fusion.

Slip behind the handcrafted wooden door and leave the city behind. Full-length water features ripple along the walls, while opulent fabrics, mosaic tiles and Aztec artwork create a sense of ceremony and splendour.

The menu reads like a journey through bright citrus, smoke and spice. Oysters arrive kissed with jalapeño, cucumber and lime granita, bright and refreshing. Yellowfin tuna appears two ways - tucked into a crisp taco with romesco mayonnaise and bursts of roe, or as ceviche de atún, its leche tigre theatrically chilled with liquid nitrogen for an invigorating snap of flavour. Scallops meet chorizo romesco in a deft balance of richness.

From the grill, wagyu pinchos glisten with chimichurri, while empanadas enclose 24-hour braised short rib or achiote chicken in golden pastry.

Larger plates lean into comfort and craft - duck breast with aji de gallina, fried yuca and pickled onion, and costillas a la mexicana, the short rib luxuriating in agave chipotle jus.
