The kitchen leans into pristine Queensland produce and precise technique, transforming familiar gestures of washoku into something strikingly contemporary and deeply local.
Openings are clean and confident: edamame dusted with Maldon sea salt, or a bright seafood ceviche lifted by heirloom tomato, red onion and coriander dressing. Flavours are crisp, saline and citrus-led, setting a tone of restraint and freshness that runs throughout.
