Ester Spirits is the Inner West’s ode to obsession, founded by husband-and-wife team Corinna and Felix. What began as a backyard project in their Newtown digs grew into a ten-year pursuit of the perfect botanical blend and, ultimately, a label launched in 2020 with serious pedigree.

The tipping point came swiftly when their signature creations took Best in Show at national awards in their first month, then clinched world titles in 2021. Big ambition, bigger flavour.

In the tasting room, the philosophy is crystalline - clarity, balance and botanicals that sing. Signature pours show a razor-clean lift against extra dry mixers, while complex blends deepen the plot with bitter orange, spice and a whisper of vanilla. Expect a taut spine on the palate and a finish that lingers like a good story.

Snacks are smart, artisanal companions rather than a centrepiece - manzanilla and lemon stuffed olives for briny brightness - sliced bread and butter for crunch and comfort - Apple Box smoked cheddar and La Dame goats cheese for creamy sway - duck and cherry pate and San Danielle prosciutto to bring the savoury chorus. It’s an experience with easygoing Inner West charm, built for lingering, tasting and talking.

Settle in for a flight of flavours and let the craftsmanship lift your mood all at Ester Spirits Distillery. Book a spot, enjoy with intent and follow the botanical joy!
