In Darlinghurst, Wan's Cantonese brings the poise of traditional cookery to Sydney with a contemporary glint. It's a celebration of seafood and dim sum, where timeless Hong Kong flavours meet modern technique in a refined, softly sophisticated setting. The mood suits both curious first-timers and long-time devotees of the cuisine, with an emphasis on freshness, balance and finesse.

Premium catches take centre stage, from silken Glacier 51 toothfish steamed with ginger and shallots to succulent Western Australian scallops.

Handmade dumplings arrive with exquisite precision - think prawn har gow and chicken and prawn sui mai - while the roasting and wok stations deliver familiar comforts polished for today: Peking duck pancakes and lobster toast, salt and pepper calamari and honey king prawns, black pepper Wagyu beef cubes and Wagyu beef short rib.

Infused with fire and flair, the rice and noodle selection nods to Hong Kong’s streetwise heritage, with typhoon shelter seafood fried rice and Yangzhou BBQ pork fried rice bringing texture and aroma in equal measure.

Elegant yet welcoming, this is a table for unhurried conversation and shared plates, where steam curls from bamboo baskets and the fragrance of ginger, garlic and spice drifts through the room. Reserve a spot, gather good company, and let the evening unfold - one perfectly turned morsel at a time!
