Live seafood takes centre stage, from coral trout steamed with ginger and shallots to X.O live pipies tossed through crispy vermicelli. Dim sum arrives with delicate precision - think prawn har gow and chicken and prawn sui mai - while the roasting and wok stations deliver familiar comforts polished for today: Peking duck pancakes and lobster toast, salt and pepper calamari and honey king prawns, black pepper wagyu beef cubes and wagyu beef short rib MB9+.
