Now getting to the good stuff… the food! Baia’s generous space means we can spoil both the classics crowd and the curious. At lunch, handmade ravioli filled with lamb comes bathed in a mushroom–Taleggio sauce, while pillowy potato gnocchi with slow-cooked beef cheek ragù is a bona fide crowd-pleaser. Come dinner, the after-work set can dive into scallops on sweet corn purée with a crisp coral tuile and spring onion oil, or twirl squid-ink spaghettini tossed with crab, calamari, cherry tomatoes and a whisper of spicy ’nduja. If you’re chasing something hearty, the MS8 Wagyu rump cap arrives with portobello mushrooms and a glossy red wine jus.
