Silvester's Restaurant brings a casual, contemporary spirit to the heart of Sydney's CBD. Set on the lobby level of a landmark hotel, it pairs a lively lounge atmosphere with refined, produce-driven dining, making it just as suited to lingering dinners as quick bites.

To showcase local produce and deep, seasonal flavours, the Winter Menu is tightly curated, moving with ease from artisan starters to the prime selections from the grill. Starters shine with inviting textures, from a delicate beetroot carpaccio paired with almond and dukkah, to a warm filo saganaki finished with honey, figs, oregano and winter herbs.

For the main course, dishes from the coast and pasture take centre stage. Enjoy the perfectly balanced saddle tail snapper presented alongside dahl, cavolo nero and chickpeas, or indulge in a hearty Margra lamb shank and slow-cooked gravy pie accompanied by honey-roasted winter vegetables.

For steak lovers, the "From the Grill" section lets you tailor your experience, featuring excellent selections like the Grasslands beef tenderloin, Wagyu rump and Scotch fillet - complemented by a choice of distinctive sides like braised leeks with Stilton or classic shoestring fries, and finished with a glossy savoury jus or Café de Paris butter.

To finish, round out the night with a beautifully crafted dessert, such as the olive oil cake served with rhubarb and blood orange rosemary sorbet, or a warm apple and cranberry twist with lemon curd.

Swing by for shared plates, a selection of refreshing mocktails or a botanical blend from the lounge - make an evening of it and let the city hum while the flavours do the talking!
