Nestled within Pan Pacific Perth, UMA Restaurant is Peruvian at its heart, celebrating the country’s rich culinary heritage while embracing the diverse flavours and traditions found across South America.

As the first hotel accredited by Buy West Eat Best, Pan Pacific Perth proudly showcases Western Australia’s exceptional produce, with sustainability and seasonality guiding UMA’s refined approach.

Influences from Brazil, Colombia, Ecuador, Bolivia and Chile add depth and character to a menu that honours Peru’s vibrant soul while reflecting the bounty of the West Australian landscape.

Here, ethically sourced, line-caught seafood and hormone-free meats take centre stage. A ceviche of Shark Bay snapper arrives bright with charred corn and sweet potato, while salmon tiradito sings with citrus and pickled daikon.

Vibrant street food accents bring warmth and wit - think choripán with Amelia Park lamb and mint, or a delicate prawn empanada lifted by harissa spice and preserved lemon.

For the main course, larger plates keep the tempo, from market fish with cassava and salsa verde to braised rump touched with aji amarillo. Carnivores lean into a juicy lamb T-bone or a richly marbled bife ancho, with supple sides like pan de yema with feta dip and a crisp ensalada verde to complete the table. All of it unfolds in elegant surroundings that have garnered awards for contemporary cuisine and speciality dining.

Settle in and savour a culinary experience that feels both far-flung and close to home. Secure your spot and let UMA’s South American spirit meet Western Australian soul - a match made for lingering bites and lively conversation!
