dinner

Set on the lobby level of the Amora Hotel Brisbane in Spring Hill, dapl celebrates modern Australian cooking with a keen eye for locally sourced produce.

Here, dinner leans into the richness and diversity of native ingredients, presented with a creative touch that keeps the focus on flavour and freshness.

Each plate weaves local accents with global influences: think seared sea scallops lifted by bush tomato cream and finger lime, or twice-cooked pork belly brightened with maple mustard and burnt pear. Comfort meets craft in dashi-braised beef short rib with daikon and Swiss chard, while bush-spiced lamb rump pairs beautifully with almond romesco and a sprightly river mint chimichurri.

Alongside the mains, thoughtful sides add the perfect complement to your meal, such as honey-roasted Dutch carrots with lemon labneh and macadamia, or charred broccolini dressed in tahini verde, preserved lemon, and a dukkah crunch.

For a sweet finish, options range from sticky-toffee date pudding with a velvety malt glaze to cinnamon one of their signature beverages.

Gather your crowd and settle in - it's modern Australian dining with plenty to savour, and a little sparkle for good measure!
