Tucked into Spring Hill, The Inchcolm Bar brings boutique polish to Brisbane’s dinner hour. Part of Ode Hotels, it is a uniquely intimate hotel bar where martinis meet a mellow soundtrack of jazz. The bar opens from 5–9 pm daily, setting an elegant rhythm for pre-dinner aperitifs or an unhurried evening in refined company.
The menu leans into European technique with a contemporary twist, favouring clear, confident flavours. A sourdough baguette with cultured butter and smoked salt sets a quietly luxurious tone, while rarebit rosti with nduja adds a playful kick. The dragonfruit cured salmon terrine, brightened by toasted nori vinaigrette and a rye crumb, hints at coastal freshness meeting pantry craft.
There is comfort and character in the mains: confit duck leg nestled into Toulouse cassoulet with fennel pangrattato, and chargrilled swordfish lifted by sauce putanesca, fried capers, burnt lemon and basil oil.
