From farm to plate, their food is as fresh, organic and ethically-grown as it gets. Celebrated Chef Damon Porter uses only the best ingredients, and he regularly changes the menu to reflect the seasons, maintaining a "first name" relationship with each of Vaquero's suppliers.
Every dish is a little celebration of Spanish flavours and Brisbane produce, from the leek and ricotta filled pasta (V) to the sous vide lamb saddle. Try the smoked duck breast and rhubarb, a classic Vaquero dish that is slow-cooked in their charcoal oven.
