Bergen brings a composed, unpretentious spirit to Toowoomba, its very name meaning “mountain” in Norwegian. Situated atop a mountain in Toowoomba, the restaurant leans into simplicity and seasonality, an ethos shaped by owner Clayton Costigan’s childhood on his family’s farm. It is the kind of dining room where polish meets ease; class and casualness in effortless balance.

The menu reads like a quiet celebration of provenance. Bakers Duck sourdough arrives warm with confit garlic and thyme butter; Pacific oysters sparkle under an orange and dill mignonette. There is Atlantic salmon ceviche dressed in coconut with chili, pickled leaf and fried shallot, while a 230g eye fillet is paired with café de paris butter, a neat potato galette and blackened carrot. Duck breast follows a similar thread of restraint, brightened by celeriac remoulade, orange glaze, asparagus and hazelnut. To finish, a vanilla set cream with lychee, blood orange and torched meringue, or the Bergen tiramisu.
