Shaped over millennia and touched by Persian, Mongolian and Chinese influences, regional recipes champion depth, balance and character, serving food designed for sharing and savouring.
At the helm, chefs Ravinder Singh and Mohit bring over 25 years of experience to the pass. Appetite-opening nibbles such as samosas and onion bhaji set the stage, leading into the warmth of the tandoor and slow-cooked gravies: think tandoori chicken with smoky edges, chicken tikka masala and butter chicken in silken tomato sauces, robust rogan josh and a lively vindaloo, alongside coastal comforts like Goan fish curry.
