dinner

Rooted in Sussex Street’s sail‑making past, Sailmaker channels Darling Harbour’s working history into a modern, harbourside dining room that celebrates New South Wales’ hero suppliers. Fresh produce and an abundant, sustainable seafood selection set the tone, bringing a truly local sensibility to the plate. Guided by Hyatt’s philosophy, Food. Thoughtfully Sourced. Carefully Served., the kitchen focuses on responsible sourcing and healthful options that support guests’ wellbeing.

The cooking speaks in a contemporary Australian accent with global flourishes. Begin by breaking bread with Iggy's organic spelt sourdough, enriched with truffle and aged cow’s milk butter. From there, the lift of a Middle Eastern salad with spiced grilled chicken and tahini‑sumac yogurt meets the comfort of creamy mushroom fettuccine, or a hearty braised beef tagilatelle. The grill keeps things simple and exacting: think pristine Ora King salmon or a robust Portoro sirloin, while staples like pork belly fried rice and an Angus cheeseburger nod to easygoing indulgence.

Sweets steer towards the bright and the nostalgic alike, whether a mango crème brûlée scattered with dried mango and berries, or an old fashioned chocolate cake with vanilla anglaise. Anchored to place and produce, Sailmaker offers a grounded, harbourside experience that feels both polished and personal. Set sail for Sailmaker, and drop anchor for flavours that linger long after the tide goes out.
