Guerrilla slips quietly into Edge Hill, Cairns, a cosy hideaway where modern Mexican cooking meets the bounty of Queensland. Here, heritage techniques are given a contemporary twist, favouring bold flavours and a refreshingly no‑frills attitude. Natural wines set the tone for a meal that feels both intimate and a little subversive — the sort of place one stumbles upon and immediately wants to keep secret.

The opening salvos speak of the sea and the street: guacamole scooped up with blue corn chips, crisp squid rings, reef fish ceviche heaped beside taro chips, and seared Hokkaido scallops over corn miso purée. It is produce-first cooking, precise yet playful, with texture and acidity doing the heavy lifting.

Tacos arrive brimming with intent — tender brisket or birria pork — while Baja fish drops a coastal wink. Larger plates turn the volume up: a comforting mushroom enchilada, chipotle pork ribs with slow, smoky swagger, and slow-braised Oaxacan lamb shanks that fall away at a sigh. Mexico’s regions whisper through every bite, anchored by tropical provenance.

Service is warm and unpretentious, with Eduardo’s easy charm in the mix. Come for the discovery, stay for the rhythm of plates and pours. Book in, settle back, and let Guerrilla stage its little rebellion on your palate — sí o sí.
