Contemporary and refined, it marries locally sourced ingredients with a thoughtful use of Australian native botanicals, letting the city’s glittering skyline play counterpoint to a kitchen focused on clean flavours and considered technique.
The menu leans into richness and nuance. A silken duck parfait finds lift in toasted brioche and marmalade, while pork belly meets spanner crab in a bright Thai herb salad, slicked with chili caramel. Mains continue the theme: roast duck with burnt onion soubice, cherries and asparagus, finished with honey pollen and jus gras; and a New York cut wagyu striploin, partnered with potato fondant, braised shallots and a classic red wine jus.
Sides carry their own quiet flair: organic carrots with harissa dressing, sumac spiced yoghurt and fried shallots; dwarf green beans, hand-picked and dressed with preserved lemon and nduja, with whipped garlic for good measure. To close, a yoghurt panna cotta drifts through pineapple, ginger and lychee, set against a breezy piña colada sorbet.
