Perched at the peak of Mount Coot-Tha, The Summit sets a refined stage with a panoramic sweep of Brisbane’s skyline, from the CBD to the city’s most iconic landmarks. This contemporary restaurant champions Australian cuisine, weaving native botanicals and locally sourced ingredients into considered plates. It is a setting made for celebrations, equally suited to intimate tables and grand occasions, with that rare combination of elevated dining and an even more elevated view.
The shared menu leans into texture, balance, and a quiet confidence. It opens with house-baked sourdough, its cultured truffle butter and honey tilting savoury into seduction, alongside a silken duck parfait on toasted brioche with a bright lick of marmalade. Heartier courses follow: roast duck with burnt onion soubice, cherries, asparagus, honey pollen and jus gras; and a 2GR NY cut wagyu striploin MB5+ set against potato fondant, braised shallots and red wine jus. Sides add colour and lift — carrots in organic harissa with sumac spiced yogurt and fried shallots, or dwarf green beans brightened by hand-picked preserved lemon, nduja and whipped garlic.
To finish, a Valrhona chocolate soufflé tart with salted caramel and white chocolate seals the memory with a glossy flourish. With Brisbane glittering below, conversation stretches and time slips by. For an occasion worth savouring, diners can book a twilight table and let the skyline do the talking.
