They have reimagined the classic Australian barbecue for a spectacular dinner experience: traditional American-style smoked ribs and meat, premium meat cuts from the grill, wood oven-roasted fish and vegetables cooked to perfection, and of course luscious desserts.
Collins Kitchen serves up both small and large plates for the group to share. The grill serves up the freshest cuts of meat, from a half chicken to tenderloin. Meanwhile, the small plates are designed to pack a punch with every mouthful. Seafood lovers can tuck into kingfish crudo with avocado and Aleppo pepper or the king prawns with garlic and salted peppercorn sauce.
There are several highlights on the Collins Kitchen menu including the 12-hour slow-cooked Black Angus Brisket - served with Barbecue Sauce, the dry-aged Lamb Neck or Hand Pressed Wagyu Burger. For vegetarian options, wood-fire-roasted cauliflower and beetroot salad are fantastic.
