BRINE Bistro brings a quietly confident charm to Albert Park: a cosy, intimate room where great coffee, good food and thoughtful drinks set an easy rhythm to the day. Modern Australian cooking without the fuss anchors the experience, with quality produce and clear, unfussy flavours taking centre stage. It is the sort of neighbourhood bistro made for lingering.
In the kitchen, Ben draws on more than two decades spent cooking across Australia, from the mountains to the coast. He has led the team at Elk in Falls Creek, worked alongside Melbourne chef Barry Iddles at 360Q in Queenscliff, and helped launch Innocent Bystander in Healesville. At BRINE he cooks what he genuinely loves, drawing on recipes, techniques and ideas gathered along the way, all distilled into food that feels both considered and comfortable.
Shannon rounds out the picture. Raised in South Australia’s Barossa Valley, she built a career across cocktail bars, restaurants and guest experiences, bringing a refined sense of hospitality that goes beyond what lands on the table. Together, after owning and operating their own restaurant in Far North Queensland, the pair have created a place where service is warm, drinks are well made and guests feel looked after.
