Sancho Taqueria & Tequileria brings a bright, flavour-first slice of Mexico to Stafford, Brisbane.

The kitchen moves between street-corner staples and borderland comforts, pairing fire, depth and citrus with breezy confidence. Expect warm tortillas, lively salsas and dishes made for sharing, with refreshing house sips never far away.

Meals begin with small bites that set the tone: fresh guacamole glossed with salsa verde and coriander oil, and a thoughtful Three Sisters medley where roasted pumpkin and bean hummus meet a pinto bean crunch.

Nearby, charred eloté wears lime crema, parmesan and a sprinkle of furikake, while honey-glazed wings land sticky, crisp and zesty. Tacos take centre stage: carnitas crowned with crackling and pineapple-avocado salsa, alongside slow 14-hour beef brisket with red salsa and frijoles.

Bigger appetites can opt for chicken asado brushed with agave and green sauce, or pork and piña, bringing all the sunlit richness and savour of the grill balanced with tang and smoke.

To complement the meal, the bar pours refreshing creations like the seasonal Agua Fresca and citrusy Yuzu Blossom. For dessert, think flan in the New Mexican style and golden sopaipillas drizzled with smoked local chilli honey.

Gather your favourites, settle in, and let the conversation and tortillas keep on rolling!
