Chef de Cuisines Joseph Cain works closely with fisherman and farmers throughout New South Wales to create a simple, yet refined menu that celebrates some of Australia’s best produce. Adopting a ‘made from scratch’ philosophy try our market fresh Table Concept. Serving small batches of seasonally inspired dishes in a relaxed and interactive setting, the Lunch Table offers a soup of the day, energising salad station, carvery and sandwiches, while our Seafood Table treats guests to an array of fresh seafood including oysters and a whole roasted fish.

Sailmaker puts a fresh spin on traditional Sunday Brunch, serving up a spread that is sure to leave you wanting more. It is our first time dine in Sailmaker restaurant at Hyatt Regency Sydney. It is a large restaurant with modern decorations. The food was very tasty and fresh. My favorite part was the desert. The honey Yoghurt Panna Cotta was so delicious. The services were great too. The waitresses were very friendly and professional. It was a 5 star hotel restaurant service experience. I would recommend it to my family and friends.

We had dinner birthday dinner for our friend and the service is great and nice cosy but food is average. Also we tried barramundi, salmon and spring chicken but serve in small portion with roast tomatoes. But our whole experience is ok and they are very understanding as we added one more person with us so instead we booked 4 with plus 1 so can't complained. Our waiter is very approachable and very attentive. We can try again in the future.

The food was great and the service people were very professional. The only thing I need to remind everyone about Sunday brunch is that champagne will charge you 20PP, but no one reminds you. I thought that was part of brunch until you pay the bill extra $40 for two wine packages, and I didn't enjoy it much; otherwise, I would order some other drinks. Overall, it was all good except for the last minute.

My family and i went there for a birthday celebration dinner and from start we had a nice experience there and our waitress Lily went above and beyond to make us happy and even organised for a birthday dessert for my wife. Everyone was happy with the service she provided.

The restaurant is in a very nice setting next to Darling Harbour and my friend and I were looking forward to the Sunday Seafood Brunch with sparkling wine.

The reception staff were excellent. However, service was somewhat lacking - maybe too little staff for the fully packed restaurant?!? It took a lot of time with repeated requests, to obtain finger bowls to rinse to handle the tasty seafood (crab & prawns).

Further, even though the dessert bar had plenty of cakes, I was disappointed that there was no fruit salad!?!

The food was divine, we thoroughly enjoyed it. Our only complaint was the “from the grill” meals which were very expensive did not come with sides. Our table server was lovely and very attentive. We had a lovely time.

I loved the ambience of the place, it's good for dinner dates! We ordered oysters for starter. It was fresh and highly recommended. For our mains, the carbonara is a must try. We also ordered salmon which was good too. Tip for the salmon: you can order 2 types of sauce if you can't choose as the sauces all sounded good. We ended our night with their mango tapioca dessert, quite different but tasted good as well. The food was great but what made it different was the service. Our servers were energetic and bubbly which made the experience lovely.

We noticed that one of the Sydney restaurants participating at first table was right at the hotel where we were staying - so trying it out was a must. The decor was elegant yet low key, not over the top. Service was excellent throughout the evening, staff members were attentive, efficient and friendly. All the dishes we ordered were full of flavour and well presented (We both started with oysters, then I had seafood and my partner had a sirloin). Desserts were delicious. Portions were also well balanced - both of us ate everything and we left the restaurant full and content, without feeling sick from eating too much. Highly recommended!

My daughter and I dined here last night. Lovely atmosphere and attentive staff. Both of our meals (lamb cutlets and steak) were cooked to perfection. Without the First Table offer, we probably would never have tried this restaurant but so glad we did.

Me and my girlfriend was having a wonderful time at sailmaker, we have prawn cocktail as starter and for the main i try their steak on the bone with 3 signatures of sauces ( the butter peppercorn sauce was amazing ! )

Service also is good, every staff was lovely and always check the food quality with me

Just a little note for improving the service : it will always better if the one took the order prepare a note and pen instead try to remember all the order without writing, it will be help a lot for avoiding a wrong order or other mistake could be happen

Although the menu wasn't the same as what I saw online, the choices were good. I love seafood and the food was superb. We started with the pumpkin soup. Loved the bread that came along with it. I had the prawns and my son had the scallops. Both very well prepared and presented. Will be back to try other items on the menu.

There were 4 of us, we ordered an entree and a main each. Entrees were quite good but the main were average considering the restaurant marketed itself as a fine dining restaurant. The serivce was pretty good and our waiter was quite attentive. Overall, it was an OK/decent enough experience but nothing to write home about.

Great experience. Had a quick dinner here before walking up to West Side Story at Mrs Macquarie's Chair. Told our waiter that we were in a rush as dinner sitting started at 6pm and he duly accommodated. We will be back to enjoy the dining experience again without having to rush.
