Inspired by the sun, surf and sand of Byron Bay, Bonito prides itself on being super local and waving the flag for one of the most idyllic destinations in Australia.
Caramel woods, shafts of soft sunlight and terracotta hues make Bonito an exceedingly pleasant destination for a lazy lunch or supper. Everything here can be described as 'soft', ranging from the easy-going shades of wood, the curved shape of the walls and the inviting textures that welcome you in wholeheartedly. And you'll find them in Hotel Marvell, which probably gives you an inkling of the kind of faultless service you can expect.
The star of the menu has to be the seafood. They're serving up the local seas on a plate with the likes of Hiramasa Kingfish, Lolligo squid and Fremantle octopus, all served with spritely local vegetables prepared with a modern mindset. Mains also delve into the oceans with daily fish and prawn tortellini whilst also venturing on land for irresistibly crispy pork belly and spiced duck from Game Farm.
Dinner follows the same cues and adds to it with spanner crab from Fraser Island, dry-aged fish and lobster from Whole Bay. It's also no stranger to variety and keeps it exciting with wagyu short ribs and an intriguing 'Textures of chocolate' dessert that is one delicious surprise after another.
