In the one hundred years since losing a bloody war against the Americans, the people of Northern Mexico taught the gringos in California, Texas, New Mexico, Utah, Colorado, and Arizona about burritos, nachos, and guacamole. Over this time, a distinctive cuisine developed a Mexican-American style of food big on flavour and fresh ingredients.
